Swiss Water processed, roasted after the order and shipped within 24 hours of roasting, by their own account. Whisper Espresso pulls a real crema; Hush-Hush is the everyday drip decaf; the Ethiopia Sidamo Bombe is a light single origin. 12-oz, 1-lb and 5-lb on each product page.
Quills doesn't roast until you buy ("All coffee is roasted to order," their words), and their espresso, Blacksmith, has been pulled more than five million times across their seven cafés. Blacksmith, Inkwell, Night Owl and the Southern Gothic cold-brew blend all offer a 5-lb size.

The roaster does. Stone Street ships from Brooklyn, Big Bad Decaf from Saint Paul, Zoka from Washington State, Dekáf from Salem, Massachusetts, Quills from Louisville. ShopCoffee has no warehouse; we run the shelf and the introductions.
